Mac n Cheese!

So, diets…

Greg and I have been super careful with what we are eating at the moment. There are 7 whole months until our wedding and I will be a size 10 (UK size 10!!)!

Since the start of this diet, I have been craving Mac and Cheese – American style! I looked up a couple of recipes and they were all ridiculously calorific, so I have avoided it like the plague. Last night, I was so close to ordering pizza, I thought, why not!

This recipe serves 4 greedy people, or 6 normal people! (We just about have two portions left.. But hey! I haven’t cheated too much on my diet…)

You will need:
2-3 cups of pasta (whatever your favourite is!)
1/3 cup of butter
1/2 cup of flour
3 cups of milk
3 cups of cheese
1 cup of chicken

So, I started by frying the chicken – making sure it was just cooked, not over done. I then boiled the pasta until it was almost cooked.

While the pasta was bubbling away, I put about 1/3 cup of butter in a pan and melted it, gently on a low heat. I added the flour to it and mixed for about 2 minutes. Then, one cup at a time, I added the milk. Although the majority of recipes I read said use cream or whole milk, I used skimmed milk. If you find the sauce is not creamy enough, add more cheese!

When this was all mixed, I added the cheese! I used a low fat cheddar – but anything will work (as long as it is a cheese that melts! Halloumi/Mozzarella – probably not…!). Now this has to be gradual as the cheese can take some time to melt. When the mixture starts to thicken, you are almost done! I constantly taste it to make sure I am not over-doing or under-doing the cheese.

Pour the mix over the drained pasta and pop into dishes, ready to bake off.. I then smashed a bag of ready salted crisps a small pinch of cheese and put it over the top. I also added some Franks buffalo hot sauce – not too much though!

I baked it for about 15-20 minutes, just to make it perfect!

YUM! Roughly 350-400 calories per portion (if between 6 people) – not too bad!
