Slow Cooker Chunky Vegetable Soup

Guys, this is probably one of the shortest posts I have ever written, yet one of my favourites!!

When you have a tonne of vegetables on the turn, this one is for you! It is so simple and so good for you. Despite not liking vegetables by themselves, Luke loves this recipe and eats it so fast.

Although I used the below ingredients, any vegetables work – literally!

Ingredients
2 Carrots
2 Potatoes
1 Onion
1 Sweet Potato
2 Mushrooms
1 Courgette
3 Baby Aubergines
10 Baby Kale Heads
1 Red Pepper
1 Tomato
1 Clove of Garlic
1 Tin of Chopped Tomatoes

Method
1. Chop everything into small cubes
2. Add everything into your slow cooker

3. Cook on high for 4 hours, or low for 8 hours

IT IS LITERALLY THAT SIMPLE! I KID YOU NOT!

Personally, I don’t blend the vegetables or add any stock. There are so many vegetables in there, the flavour is full and perfect as it is.

This freezes incredibly well.

Luke has this on its own, with pasta or spaghetti or with bread!
